Lemon balm
Lemon balm is a perennial plant that is part of the mint or deadnettle family (Lamiaceae or Labiateae). It has a jagged leaf edge and a bright-green, soft leaf that smells of lemon.
The stems are somewhat square. Lemon balm has a penetrating, honey-sweet lemon smell.
Flavor
The fresh lemon-balm leaf tastes fresh and like lemon. The leaves can be used in a wide range of dishes, such as soups, sauces, fish dishes and omelets.
In the traditional Dutch kitchen, we encounter the leaves of lemon balm in mayonnaises, pickled herring and fruit dishes. The leaves also add flavor to oils, vinegar and liqueurs.
The leaves of lemon balm are used to make tea.

The leaves of lemon balm are used fresh.
